I started pointedly eating healthier two years ago as I prepared for a summer trip, backpacking the mountains of New Mexico. Which weight did I want to carry: a little potbelly or a 50 pound backpack?
After I made a stubborn decision, nutritious meals grew easier, and the calorie-heavy ones felt sinful and became more difficult. Enjoying concocting—and eating—delicious food helped me to realize what I ended up ingesting, and it was a breeze as I began to enjoy it.
This year, canoeing from Minnesota to Canada, the journey remained fresh in my mind. Maintaining a healthy diet and lifestyle ensured that I could enjoy that adventure too to the fullest—and hopefully go on many more!
