  • Soba noodles – 200 g (I substituted)

  • Soy sauce – 3 tbsp

  • Sweet sake– 2 tbsp

  • Stock – ½ cup

  • Sugar – to taste

  • Sesame seeds (toasted) – 1 tbsp

  • Spring onions (finely chopped) – 2 tbsp

  • Ice cubes – as required

  • Furikake – as required

  • Egg

Noodle Preparation:

  • Boil noodles until al dente.

  • Drain and rinse immediately under cold running water to halt cooking.

  • Place noodles in a bowl with ice cubes to chill thoroughly.

Dipping Sauce (Tsuyu) Preparation:

  • In a saucepan, combine stock, soy sauce,  sake, and sugar.

  • Bring to a gentle simmer, stirring until sugar dissolves.

  • Remove from heat and cool to room temperature; refrigerate for optimal chill.

Serving:

  • Boil an egg for 8 minutes for a soft boil

  • Arrange chilled soba noodles 

  • Serve dipping sauce (tsuyu) separately, with ice.

  • Garnish noodles with sesame seeds, spring onions, and furikake.
